Rice Technology Kochi Co., Ltd. won the Glocalink Award at the Agri-Tech Grand Prix.

 

The 3rd Agritech Grand Prix was held on Saturday, September 24, 2016 at Yoshinoya Holdings, Inc,Rice Technology KAWACHI Co.(Mass production of a new food material "rice gel" and development and promotion of high value-added food products)} received the GLOKA LINK Award.

Rice Technology KAWACHI is a venture company that creates new food ingredients and foods by producing gluten-free foods, calorie-reduced foods, etc. using "rice gel" developed in-house.
Rice gel is made from high-amylose rice that has been converted to gel by high-speed agitation (shearing) and granular gelatinization (cooking rice) using a technology called "Direct Gel Conversion" (patented).
Rice gel can be characterized by a wide range of physical properties, from a loose jelly-like consistency to a high elasticity like rubber. This makes it possible to use rice gel in all kinds of foods, including cakes, soft serve ice cream, and dressings.
The use of high-amylose rice is also intended to increase the demand for rice and expand Japan's agricultural demand.
